Preparation of Filling

    Prepare the Vegetables

    Dice the bell peppers and onion into small pieces. Chop the green chilies if using fresh.

    Combine the Cheese

    In a mixing bowl, combine the Monterey Jack cheese and cheddar cheese. Set aside.

Assembling the Quesadilla

    Heat the Pan

    Place a non-stick skillet over medium heat and allow it to warm up.

    Layer the Ingredients

    Place one flour tortilla in the skillet. Sprinkle half of the cheese mixture evenly over the tortilla. Add half of the diced bell peppers, onion, and green chilies on top of the cheese.

    Add Beans

    Spread half of the cooked black beans over the vegetables. Top with another layer of cheese.

    Top with Tortilla

    Place another flour tortilla on top to complete the quesadilla.

Cooking the Quesadilla

    Cook Until Golden

    Cook for about 3-4 minutes on one side, or until the bottom tortilla is golden brown and crispy. Carefully flip the quesadilla using a spatula.

    Finish Cooking

    Cook the other side for an additional 3-4 minutes until golden and the cheese is melted.

    Remove and Slice

    Remove the quesadilla from the skillet and let it cool for a minute. Slice into wedges.

Serving

    Plate the Quesadilla

    Serve warm with pico de gallo, sour cream, and guacamole on the side.
