    Trim any excess fat from the pork tenderloin and season it with salt and black pepper on all sides.

    Spread the Dijon mustard evenly over the pork tenderloin, ensuring it is well coated.

    In a skillet, heat 2 tablespoons of olive oil over medium-high heat. Once hot, add the pork tenderloin and sear for about 4-5 minutes on each side until golden brown.

    Cook the Pork

    Reduce the heat to medium-low, cover the skillet, and cook the pork for an additional 10-15 minutes or until the internal temperature reaches 145°F (63°C). Remove from heat and let it rest for 5 minutes before slicing.

    While the pork is resting, wash and peel the potatoes. Cut them into small cubes or wedges.
