Prepare the Pork Loin

    Marinate the Pork

    In a bowl, mix the Dijon mustard, minced garlic, olive oil, salt, black pepper, and chopped thyme. Rub this mixture all over the pork loin and let it marinate for at least 30 minutes.

    Preheat the Grill

    While the pork is marinating, preheat your grill to medium-high heat.

    Grill the Pork

    Once the grill is hot, place the marinated pork loin on the grill. Cook for about 20-25 minutes, turning occasionally until the internal temperature reaches 145°F (63°C). Remove from the grill and let it rest for 5-10 minutes before slicing.

    In a large skillet, heat the olive oil over medium heat.

    Add the chopped onion to the skillet and sauté until translucent, about 3-4 minutes.

    Add the diced potatoes to the skillet. Season with salt, black pepper, and paprika. Stir well to coat.
