Method

Pasta Preparation

  1. 1

    Cook the Pasta

In a large pot of salted boiling water, add the pasta and cook according to package instructions until al dente. Drain and set aside.

Vegetable Preparation

  1. 2

    Prepare the Vegetables

While the pasta is cooking, wash and chop all vegetables into bite-sized pieces: bell pepper, zucchini, carrot, broccoli, and cherry tomatoes.

Sauce Preparation

  1. 3

    Make the Sauce

In a large skillet over medium heat, add the olive oil. Once hot, add the minced garlic and sauté for about 1 minute until fragrant.

  2. 4

    Add Vegetables

Add the chopped vegetables to the skillet. Sauté for about 5-7 minutes until they are tender but still crisp.

  3. 5

    Combine Ingredients

Pour the vegetable broth into the skillet and bring to a simmer. Add the cooked pasta, Parmesan cheese, salt, and black pepper. Toss everything together until well combined and heated through.

Final Touch

  1. 6

    Garnish and Serve

Remove from heat and stir in the chopped fresh basil. Serve hot, garnished with extra Parmesan cheese if desired.
