Method

Prepare the Linguine

  1. 1

    Cook the Pasta

In a large pot of boiling salted water, add the linguine and cook according to package instructions until al dente. Drain and set aside.

Prepare the Sauce

  1. 2

    Sauté the Vegetables

In a large skillet, heat the olive oil over medium heat. Add minced garlic (chop the cloves finely) and sauté for about 1 minute until fragrant.

  2. 3

    Add Mushrooms and Sun-dried Tomatoes

Add the sliced mushrooms to the skillet and cook for 5-7 minutes until they start to soften. Then add the chopped sun-dried tomatoes and capers, stirring to combine.

  3. 4

    Deglaze with White Wine

Pour in the white wine and allow it to simmer for about 3-4 minutes, letting it reduce slightly.

Combine

  1. 5

    Mix Pasta and Sauce

Add the cooked linguine to the skillet with the sauce. Toss everything together until the pasta is well coated.

  2. 6

    Add Parmesan Cheese

Sprinkle the grated parmesan cheese over the pasta and toss again until the cheese is melted and incorporated.

Serve

  1. 7

    Plate the Dish

Serve the Linguine Pietro hot, garnished with additional parmesan cheese if desired.
