    Prepare the Filling

    In a mixing bowl, combine the Monterey Jack cheese and canned green chilies until well mixed.

    Fill the Wontons

    Take a wonton wrapper and place a teaspoon of the cheese and chili mixture in the center. Wet the edges of the wrapper with a little water and fold it in half to form a triangle. Press the edges firmly to seal. Repeat with the remaining wrappers and filling.

    Fry the Wontons

    In a deep skillet, heat the vegetable oil over medium heat. Once hot, carefully add the filled wontons in batches, frying until golden brown and crispy, about 3-4 minutes each side. Remove with a slotted spoon and drain on paper towels.

Guacamole Sauce

    Prepare the Guacamole

    In a bowl, mash the ripe avocados with a fork. Mix in the lime juice, chopped cilantro, salt, and minced jalapeño (if using) until smooth and well combined.
