Pimento Cheese Preparation

Mix Ingredients
In a mixing bowl, combine the cream cheese, sharp cheddar cheese, pimento peppers (drained), mayonnaise, hot sauce, salt, and black pepper. Mix until well combined and smooth.

Chill
Cover the bowl with plastic wrap and refrigerate the pimento cheese mixture for at least 30 minutes to allow flavors to meld.
Fried Green Tomatoes Preparation

Slice Tomatoes
Wash and slice the green tomatoes into 1/4 inch thick rounds.

Prepare Breading Station
Set up a breading station with three shallow dishes: one with flour mixed with salt and black pepper, one with buttermilk, and one with cornmeal.

Breading Tomatoes
Dip each tomato slice first into the flour mixture, then into the buttermilk, and finally coat it with cornmeal.

Fry Tomatoes
In a large skillet, heat the cooking oil over medium heat. Once hot, add the breaded tomato slices in batches, frying until golden brown, about 3-4 minutes per side. Drain on paper towels.

Cook Bacon
In a separate skillet, cook the applewood smoked bacon over medium heat until crispy. Remove and drain on paper towels.

Toast Bread
Toast the whole wheat bread slices until golden brown.

Assemble Sandwiches
Spread a generous amount of pimento cheese on two slices of toasted bread. Layer with crispy bacon, lettuce, fried green tomatoes, and tomato slices. Top with the remaining slices of bread.

Cut the sandwiches in half and serve with kettle chips on the side.
