Prepare the Crab Mixture
In a large mixing bowl, combine the fresh crab meat, brioche bread (torn into small pieces), mayonnaise, Dijon mustard, Worcestershire sauce, chopped green onions, egg, old bay seasoning, salt, and black pepper. Gently fold the ingredients together until well mixed, being careful not to break up the crab meat too much.

Form the Crab Cakes
Using your hands, form the crab mixture into 4-6 patties, about 3 inches in diameter. Place them on a parchment-lined plate and refrigerate for at least 30 minutes to help them hold their shape during cooking.

Cook the Crab Cakes
In a large skillet, heat the vegetable oil over medium heat. Once hot, add the crab cakes to the skillet, cooking in batches if necessary. Fry for about 4-5 minutes on each side, or until golden brown and heated through. Remove from the skillet and drain on paper towels.
Chipotle Aioli

Make the Aioli
In a small bowl, whisk together the mayonnaise, minced chipotle peppers, lime juice, minced garlic, and salt to taste. Adjust seasoning as needed. Set aside to let the flavors meld.
Blue Cheese Slaw

Prepare the Slaw
In a large bowl, combine the shredded green cabbage, crumbled blue cheese, shredded carrots, mayonnaise, apple cider vinegar, honey, salt, and black pepper to taste. Toss until all ingredients are well coated. Refrigerate for at least 15 minutes before serving to allow flavors to develop.
