Method

Chicken

  1. 1

    Prepare the Chicken

Preheat your grill to medium-high heat. Season the chicken breasts with olive oil, salt, and black pepper on both sides.

  2. 2

    Grill the Chicken

Place the chicken on the grill and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Remove from the grill and let rest for 5 minutes before slicing.

Pasta

  1. 3

    Boil the Water

In a large pot, bring 4 liters of water to a boil. Add 1 tablespoon of salt to the boiling water.

  2. 4

    Cook the Penne Pasta

Add the penne pasta to the boiling water and cook according to package instructions until al dente, usually about 10-12 minutes. Stir occasionally to prevent sticking.

  3. 5

    Drain the Pasta

Once cooked, drain the pasta in a colander and set aside.

Pesto

  1. 6

    Make the Pesto

In a food processor, combine the fresh basil leaves, grated Parmesan cheese, garlic cloves, olive oil, lemon juice, and salt. Blend until smooth and creamy. Adjust seasoning as needed.

Assembly

  1. 7

    Combine Pasta and Pesto

In a large mixing bowl, combine the drained penne pasta with the prepared pesto. Toss until the pasta is evenly coated.

  2. 8

    Serve

Slice the grilled chicken and serve it on top of the pesto-coated penne. Garnish with additional grated Parmesan cheese and fresh basil leaves. Enjoy!
