Cook the Chicken
In a large skillet, heat olive oil over medium heat. Season chicken breasts with salt, black pepper, and garlic powder. Add chicken to the skillet and cook for about 6-7 minutes per side, or until cooked through and juices run clear.

Coleslaw

Prepare the Coleslaw
In a large bowl, combine the finely shredded cabbage and grated carrot.

Make the Dressing
In a separate bowl, mix together the mayonnaise, apple cider vinegar, sugar, salt, and black pepper until smooth.

Combine Coleslaw
Pour the dressing over the cabbage and carrot mixture. Toss to combine and refrigerate for at least 30 minutes to allow flavors to meld.

Toast the Buns
Lightly toast the brioche buns in a toaster or on a skillet until golden brown.

Build the Sandwich
On the bottom half of each bun, add a generous portion of the pulled BBQ chicken. Top with coleslaw and pickles (if using). Place the top half of the bun on to complete the sandwich.
