Bacon Grilled Cheese Recipe
Gouda and Fontina cheeses, Woodford Reserve infused onions on grilled white bread.

Prepare the Onion Mixture

Sauté the Onions
In a medium pan, melt 1 tablespoon of butter over medium heat. Add the sliced medium onion and sauté until translucent, about 5 minutes.

Add Bourbon
Pour in 2 tablespoons of Woodford Reserve Bourbon and cook for an additional 3-4 minutes until the liquid has mostly evaporated and the onions are caramelized. Set aside.
Cook the Bacon

Fry the Bacon
In the same pan, add the 4 slices of bacon and fry over medium heat until crispy, about 5-7 minutes. Remove and drain on paper towels.
Assemble the Sandwich

Layer the Ingredients
On 2 slices of white bread, layer 2 ounces of Gouda cheese, 2 ounces of Fontina cheese, the sautéed bourbon onions, and 2 slices of crispy bacon.

Top and Butter
Place the remaining slices of bread on top of the filled sandwiches. Spread 1 tablespoon of butter on the outside of each sandwich.
Grill the Sandwich

Heat the Pan
In the same pan you used for the bacon, heat it over medium heat. Add the buttered sandwiches.

Grill Until Golden
Grill the sandwiches for about 3-4 minutes on each side, or until they are golden brown and the cheese has melted. You can press down gently with a spatula for even grilling.
Serve

Slice and Enjoy
Once grilled, remove the sandwiches from the pan, slice them in half, and serve warm.
