1. Sauté the Vegetables
In a large pot, melt the butter over medium heat. Add the chopped onion, celery, and carrot. Sauté for about 5 minutes until the vegetables are softened.
2. Add Garlic and Tomato Paste
Stir in the minced garlic and tomato paste, cooking for another 2 minutes until fragrant.
3. Combine with Broth
Pour in the chicken broth and bring the mixture to a boil. Reduce the heat and simmer for 15 minutes.
4. Add Shrimp
Add the fresh shrimp and cook until they turn pink, about 3-4 minutes.
5. Blend the Bisque
Using an immersion blender, blend the mixture until smooth. Alternatively, transfer to a blender in batches and blend until smooth.
6. Stir in Cream and Seasoning
Return the bisque to the pot, stir in the heavy cream, salt, black pepper, and cayenne pepper. Heat through over low heat.
7. Serve
Ladle the bisque into bowls and garnish with fresh parsley. Serve hot.
