    Prepare the Vegetables

    Peel and cube the butternut squash, chop the onion, and mince the garlic.

    Sauté the Onion and Garlic

    In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent. Add the minced garlic and sauté for another minute until fragrant.

    Cook the Squash

    Add the cubed butternut squash to the pot and stir. Pour in the vegetable broth. Bring to a boil, then reduce heat and let it simmer until the squash is tender, about 20 minutes.

    Blend the Soup

    Once the squash is tender, use an immersion blender to puree the soup until smooth. Alternatively, transfer the soup in batches to a blender.

    Add Coconut Milk and Season

    Stir in the coconut milk, salt, black pepper, nutmeg, and thyme. Heat through for another 5 minutes.

    Serve

    Ladle the bisque into bowls and serve warm. Optional: Garnish with a drizzle of coconut milk or fresh herbs.
