Prepare the Duck

Score the skin of the duck breasts in a crosshatch pattern, being careful not to cut into the meat. Season both sides with salt and black pepper.

Sear the Duck

In a skillet, heat olive oil over medium heat. Place the duck breasts skin-side down and sear for about 6-8 minutes until the skin is golden and crispy. Flip and cook for an additional 4-5 minutes.

Make the Sauce

Remove the duck from the skillet and let it rest. In the same skillet, add minced garlic and thyme, sauté for 1 minute. Pour in red wine and chicken broth, scraping up any bits from the bottom of the pan. Simmer for about 10 minutes until reduced.

Finish the Sauce

Stir in butter and honey until melted and combined. Adjust seasoning if necessary.

Serve

Slice the duck breasts and serve drizzled with the sauce.
