Cook the Cavatappi Noodles
In a large pot, bring salted water to a boil. Add the cavatappi noodles and cook according to package instructions until al dente. Drain and set aside.

Sauté the Vegetables
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced red onion and sauté until translucent, about 5 minutes. Add the sliced mushrooms and garlic, and continue to cook until the mushrooms are tender, about 3-4 minutes. Remove the vegetables from the skillet and set aside.

Cook the Steak
In the same skillet, add the remaining tablespoon of olive oil. Increase heat to medium-high and add the sirloin bites. Season with salt and black pepper. Sauté until browned on all sides, about 4-5 minutes. Remove from skillet and set aside.

Combine Everything
Lower the heat and stir in the heavy cream. Add the sautéed vegetables and cooked sirloin bites back into the skillet. Stir to combine and let it simmer for an additional 3-4 minutes until everything is heated through and the sauce thickens slightly.

Serve
Serve the stroganoff over the cooked cavatappi noodles. Garnish with fresh chopped parsley and enjoy!
