Preparing the Dough

Mix the Ingredients
In a large mixing bowl, combine ricotta cheese, flour, granulated sugar, eggs, baking powder, lemon zest, vanilla extract, and salt. Mix until well combined and smooth.

Chill the Dough
Cover the bowl with plastic wrap and refrigerate the dough for at least 30 minutes to firm up.
Preparing the Ganache

Heat the Cream
In a small saucepan, heat the heavy cream over medium heat until it begins to simmer.

Melt the Chocolate
Remove the saucepan from heat and stir in the white chocolate chips until melted and smooth. Add the lemon juice and stir until combined.

Cool the Ganache
Let the ganache cool to room temperature, it will thicken as it cools.
Frying the Zeppole

Heat the Oil
In a deep saucepan, heat vegetable oil over medium heat until it reaches 350°F (175°C).

Fry the Dough
Using a spoon or a small ice cream scoop, drop rounded tablespoons of the dough into the hot oil. Fry until golden brown, about 2-3 minutes on each side.

Drain and Cool
Remove the zeppole from the oil and drain on paper towels. Allow to cool slightly before serving.
Serving

Serve with Ganache
Drizzle the white chocolate ganache over the warm zeppole or serve on the side for dipping.
