Pork Bolognese Sauce and Tagliatelle

Prepare the Bolognese Sauce
In a large skillet or saucepan, heat the olive oil over medium heat. Add the chopped onion, carrot, and celery. Cook until the vegetables are soft, about 5-7 minutes.

Add Garlic and Pork
Stir in the minced garlic and cook for another minute. Add the ground pork and cook until browned, breaking it up with a spoon.

Combine Ingredients
Pour in the red wine and let it simmer for 2-3 minutes. Add the crushed tomatoes, tomato paste, oregano, salt, and pepper. Stir well and let it simmer for about 30 minutes, stirring occasionally.

Cook the Tagliatelle
Meanwhile, cook the tagliatelle pasta according to package instructions in a large pot of salted boiling water. Drain and set aside.

Combine and Serve
Once the sauce is done, combine it with the cooked tagliatelle. Serve hot, garnished with grated Parmesan cheese.
