Roast Chicken

    Prepare the Chicken

    Preheat your oven to 425°F (220°C). Rinse the chicken and pat it dry with paper towels. Rub it with olive oil, and season with garlic powder, paprika, salt, black pepper, and fresh thyme.

    Roast the Chicken

    Place the chicken on a roasting pan and roast in the preheated oven for about 1 hour to 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C). Let it rest for 10 minutes before carving.

Corn Pudding

    Prepare the Corn Pudding Mixture

    In a mixing bowl, combine fresh corn kernels, eggs, milk, cornmeal, sugar, salt, and baking powder. Mix well and then stir in melted butter.

    Bake the Corn Pudding

    Pour the mixture into a greased baking dish and bake in the same oven as the chicken for about 30-35 minutes, or until the top is golden and a toothpick comes out clean.

    Sauté Aji Dulce Peppers and Cipollini Onions

    In a skillet, heat a little olive oil over medium heat. Add sliced Aji Dulce peppers and Cipollini onions, sautéing until they are tender and slightly caramelized, about 8-10 minutes.
