Prepare the Steak
Season the ribeye steaks generously with salt and coarse black pepper on both sides.

Cook the Steak
In a large skillet, heat olive oil over medium-high heat. Add the seasoned ribeye steaks and cook for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove the steaks from the skillet and let them rest.

Make the Au Poivre Sauce
In the same skillet, add brandy and scrape up any browned bits from the bottom. Add heavy cream and simmer for 3-4 minutes until slightly thickened. Adjust seasoning with salt and additional black pepper if needed.
Creamy Polenta

Cook the Polenta
In a large saucepan, bring water or chicken broth to a boil. Slowly whisk in the polenta, stirring constantly to prevent lumps. Reduce heat to low and cook for about 20-25 minutes, stirring frequently.

Finish the Polenta
Once the polenta is creamy and thick, stir in butter, grated Parmesan cheese, and salt. Adjust seasoning to taste.
