Fondue Preparation Instructions

Prepare the Cheese
Grate both the Gruyère and Emmentaler cheeses and set aside.

Prepare the Pot
Rub the inside of a fondue pot with the garlic clove, then discard the garlic.

Heat the Wine
Pour the dry white wine into the pot and heat it over medium heat until it starts to simmer.

Add Cheese and Thicken
Gradually add the grated cheeses to the simmering wine, stirring continuously until melted and smooth.

Mix Cornstarch
In a small bowl, mix cornstarch with lemon juice. Add this mixture to the cheese fondue to thicken it.

Season the Fondue
Add nutmeg, black pepper, and adjust seasoning to taste.

Serve
Serve immediately with sourdough bread, steamed fingerling potatoes, speck, seasonal vegetables, and cornichons for dipping.
