Burger Assembly

    Prepare the Fondue

    In a saucepan, melt the cheese over low heat, stirring continuously until smooth. Set aside.

    Toast the Brioche Buns

    Slice the brioche buns in half and toast them lightly on a skillet or grill until golden brown.

    Cook the Mushrooms

    In a skillet, sauté the roasted mushrooms until heated through and season with salt and pepper.

    Assemble the Burger

    On the bottom half of each toasted bun, spread a layer of Dijon mustard, then add a layer of Bibb lettuce, followed by a slice of speck, a generous scoop of fondue, a spoonful of veal demi-glace, and a few pieces of roasted mushrooms. Top with the other half of the bun.

    Prepare the Potatoes

    Peel and cut the potatoes into thin strips. Soak in cold water for 30 minutes, then drain and dry thoroughly.

    Fry the Frites

    In a deep pot, heat the oil to 350°F (175°C). Fry the potato strips in batches until golden and crispy, about 5-7 minutes. Remove and drain on paper towels, then season with salt.
