Prepare the Veal
Season the veal cutlets with salt and black pepper. Dredge each cutlet in flour, shaking off the excess.

Bread the Cutlets
Beat the eggs in a shallow bowl. Dip the floured cutlets into the eggs, then coat them with breadcrumbs, pressing to adhere.

Fry the Cutlets
In a large skillet, heat olive oil over medium heat. Fry the breaded veal cutlets for about 3-4 minutes on each side until golden brown and cooked through. Drain on paper towels.

Prepare the Sauce
In a baking dish, spread 1 cup of marinara sauce. Place the fried veal cutlets on top, then cover with the remaining marinara sauce and sprinkle with shredded mozzarella cheese and dried herbs.

Bake
Preheat the oven to 375°F (190°C) and bake for about 15-20 minutes, or until the cheese is bubbly and golden.

Cook the Linguine
While the veal is baking, cook the linguine according to package instructions. Drain and toss with a drizzle of olive oil and fresh parsley.

Plate the veal parmesan alongside a portion of herb linguine and enjoy!
