Prepare the Chicken

Rinse the whole chicken under cold water and pat dry with paper towels. Rub the chicken with olive oil, ensuring it’s evenly coated.

Season the Chicken

In a small bowl, mix together salt, black pepper, garlic powder, onion powder, and smoked paprika. Rub this spice mixture all over the chicken, including under the skin for maximum flavor.

Preheat the Smoker

Preheat your smoker to 225°F (107°C). Soak the wood chips in water for at least 30 minutes before use to create smoke.

Smoke the Chicken

Place the seasoned chicken in the smoker, breast side up. Add the soaked wood chips to the smoker box. Smoke the chicken for about 3-4 hours or until the internal temperature reaches 165°F (74°C).

Apply BBQ Sauce

During the last 30 minutes of smoking, brush the chicken with BBQ sauce every 10 minutes for a sticky glaze.

Rest and Serve

Once done, remove the chicken from the smoker and let it rest for 10-15 minutes before carving. Serve with additional BBQ sauce on the side.
