Double Smoking the Turkey

Prepare the Turkey

Rub the turkey breast with salt, black pepper, garlic powder, and onion powder. Let it sit for about 30 minutes to absorb the flavors.

First Smoke

Preheat the smoker to 225°F (107°C). Add applewood chips to the smoker. Place the turkey breast in the smoker and smoke for about 2 hours or until the internal temperature reaches 160°F (71°C).

Rest and Cool

Remove the turkey from the smoker and let it rest for 15 minutes. Then, slice it into thin pieces.

Second Smoke

Return the sliced turkey to the smoker for an additional 30-45 minutes to enhance the smoky flavor.

Making Herbed Mayonnaise

Combine Ingredients

In a bowl, mix together mayonnaise, chopped parsley, chopped dill, and lemon juice. Stir until well combined.

Assembling the Sandwich

Build the Sandwich

Slice the butter croissants in half. Spread a generous amount of herbed mayonnaise on each half. Layer with smoked turkey, tomato slices, and lettuce leaves. Close the sandwich and serve.
