House Salad (optional)
Soup (optional, choose one)
Crepe Preparation
1. Make the Crepe Batter
In a mixing bowl, whisk together the flour, milk, eggs, and salt until smooth. Stir in the melted butter and let the batter rest for 30 minutes.
2. Cook the Crepes
Heat a non-stick skillet over medium heat. Pour about 1/4 cup of batter into the skillet, swirling to coat the bottom. Cook for about 2-3 minutes until the edges lift, then flip and cook for another 1-2 minutes. Repeat with remaining batter.
3. Add Filling
Place your choice of filling on one half of each crepe, fold it over, and let it cook for another minute to warm the filling.
Salad Preparation
4. Prepare the Salad
In a large bowl, combine mixed greens, cherry tomatoes, and cucumber. Drizzle with olive oil and balsamic vinegar, then season with salt and pepper to taste. Toss gently to combine.
Soup Preparation
5. Heat the Soup
If serving soup, heat your choice of soup in a saucepan over medium heat until warmed through.
