Veal Medallions

Lemon Parmesan Couscous

Preparation

    Prepare the Couscous

    In a saucepan, bring water to a boil. Add couscous, lemon juice, olive oil, and salt. Stir, cover, and remove from heat. Let it sit for 5 minutes, then fluff with a fork and stir in Parmesan cheese.

    Make the Cherry Rosemary Salsa

    In a bowl, combine chopped cherries, rosemary, red onion, olive oil, salt, and black pepper. Mix well and set aside.

Cooking

    Cook the Green Beans

    In a skillet, heat olive oil over medium heat. Add garlic and sauté for 1 minute. Add green beans and salt. Sauté until tender, about 5-7 minutes.

    Pan-sear the Veal Medallions

    Season the veal medallions with salt and black pepper. In a skillet, heat olive oil over high heat. Sear the veal for 3-4 minutes on each side until golden brown and cooked to desired doneness. Remove from heat and let rest.

    Finish with Black Garlic Dijon

    In the same skillet, lower the heat and add black garlic and Dijon mustard, stirring well to combine. Pour over the rested veal medallions.
