    Prepare the Potatoes

    Wash and peel the potatoes. Cut them into bite-sized cubes.

    Place the potato cubes in a bowl of cold water and let them soak for 30 minutes. This helps remove excess starch.

    Preheat your oven to 425°F (220°C).

    Drain the potatoes and pat them dry with a towel. In a large bowl, toss the potatoes with olive oil, salt, paprika, garlic powder, and black pepper until evenly coated.
