Slice the Chorizo
Cut the chorizo sausage into bite-sized pieces (about 2-3 cm thick).

Chop the Vegetables
Finely chop the onion and mince the garlic cloves.
Cooking

Sauté the Aromatics
In a large skillet or frying pan, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until it becomes translucent. Add the minced garlic and sauté for an additional minute until fragrant.

Add Chorizo
Add the sliced chorizo to the skillet, cooking for about 5-7 minutes until browned on all sides.

Add Cider and Seasonings
Pour in the dry cider, add the bay leaves, salt, and black pepper. Bring the mixture to a simmer.

Simmer
Reduce the heat to low and let it simmer for about 20 minutes, allowing the flavors to meld and the sauce to thicken slightly.

Finish with Parsley
Remove the bay leaves and stir in the fresh parsley just before serving.
