    Prepare the Potatoes

    Peel the potatoes and cut them into bite-sized pieces. Rinse them under cold water to remove excess starch.

    Boil the Potatoes

    Place the potato pieces in a large pot and cover them with water. Add a pinch of salt and bring to a boil. Cook for about 15-20 minutes, or until the potatoes are tender but not falling apart.

    Drain and Cool

    Once cooked, drain the potatoes and let them cool slightly while you prepare the alioli.

    Make the Alioli

    In a mortar and pestle, mash the garlic cloves with a pinch of salt until it forms a paste. If you don’t have a mortar, you can use a food processor.

    Emulsify the Mixture

    Add the egg yolk to the garlic paste and mix well. Slowly drizzle in the olive oil while whisking continuously until the mixture thickens and emulsifies into a creamy consistency.

    Add Flavor

    Stir in the lemon juice, salt, and black pepper to taste. Adjust seasoning as necessary.

    On a serving platter, arrange the boiled potatoes and drizzle the alioli generously over the top. Sprinkle with paprika and fresh parsley before serving.
