    Prepare the Steak

    Season the flat iron steak with salt and black pepper on both sides. Heat olive oil in a grill pan over medium-high heat. Grill the steak for about 4-5 minutes on each side for medium-rare, or until your desired doneness. Remove from the heat and let it rest.

    Make the Brandy Peppercorn Sauce

    In the same pan, add brandy and scrape any bits from the bottom. Let it reduce by half. Stir in heavy cream and crushed peppercorns, and simmer until slightly thickened. Season with salt to taste.

    Prepare the Fries

    Peel and cut the potatoes into fries. Heat oil in a deep fryer or large pot to 350°F (175°C). Fry the potatoes in batches until golden and crispy, about 4-5 minutes per batch. Drain on paper towels and season with salt.

    Dress the Greens

    In a bowl, whisk together vinegar, olive oil, salt, and black pepper. Toss the fresh greens in the dressing just before serving.

    Slice the rested steak and serve it on a plate with fries, topped with the brandy peppercorn sauce, and a side of dressed greens.
