Crust Preparation

1. Make the Dough

In a large mixing bowl, combine the flour and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in the cold water, a tablespoon at a time, until the dough comes together.

2. Chill the Dough

Shape the dough into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.

3. Pre-bake the Crust

Preheat the oven to 375°F (190°C). Roll out the chilled dough and fit it into a 9-inch pie pan. Prick the bottom with a fork and bake for 15 minutes until lightly golden.

Filling Preparation

4. Prepare the Filling

In a mixing bowl, whisk together the eggs, heavy cream, salt, black pepper, and nutmeg. Stir in the cheese, bacon or ham, and spinach.

5. Bake the Quiche

Pour the filling into the pre-baked crust. Bake in the oven for 30-35 minutes, or until the filling is set and lightly golden on top.

Salad Preparation

6. Assemble the Salad

In a large bowl, combine the mixed greens, cherry tomatoes, cucumber, red onion, and feta cheese.

7. Dress the Salad

In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper. Drizzle the dressing over the salad and toss to coat.

Slice the quiche and serve warm alongside the W Porte Rouge salad.
