Focaccia Preparation

Prepare the Dough
In a bowl, combine warm water and yeast. Let it sit for 5 minutes until frothy. In a large mixing bowl, add flour and sea salt. Make a well in the center and pour in the yeast mixture and olive oil. Mix until a dough forms.

Knead and Rise
Turn the dough onto a floured surface and knead for about 10 minutes until smooth. Place in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 1 hour or until doubled in size.

Shape and Bake
Preheat the oven to 425°F (220°C). Punch down the dough and spread it onto a greased baking sheet. Make dimples with your fingers and sprinkle the crumbled gorgonzola cheese on top. Bake for 20-25 minutes until golden brown.

Bake the Escargot
Place the escargot mixture into a small baking dish and bake in the oven at 350°F (175°C) for about 10-12 minutes until heated through.

Assemble the Salad
In a large bowl, combine the torn frisée, sliced pear, and toasted walnuts. In a separate small bowl, whisk together balsamic vinegar, olive oil, salt, and pepper. Drizzle the dressing over the salad and toss gently to combine.
