Method

Prepare the Mussels

    Clean the Mussels

    Rinse the Penn Cove mussels under cold water, scrubbing the shells to remove any debris. Remove the beards if present.

    Cook the Mussels

    In a large pot, melt the maitre d’ butter over medium heat. Add the minced garlic and sauté until fragrant. Pour in the white wine and bring it to a simmer. Add the cleaned mussels and cover the pot. Cook for about 5-7 minutes, or until the mussels have opened. Discard any that remain closed.

    Finish the Mussels

    Stir in the chopped parsley and lemon juice just before serving.

Prepare the Frites

    Fry the Potatoes

    In a large pot, heat the vegetable oil over medium-high heat. Once hot, fry the cut potatoes in batches until golden brown and crispy, about 5-7 minutes per batch. Remove and drain on paper towels. Sprinkle with salt while hot.

Prepare the Aioli

    Mix the Aioli

    In a bowl, combine the mayonnaise, minced garlic, lemon juice, and salt. Mix well until combined.

Serve

    Plate the Dish

    Serve the cooked mussels in a bowl with a side of frites, a small bowl of aioli, and slices of baguette for dipping.
