    Prepare the Goat Cheese

    Preheat the oven to 350°F (175°C). In a food processor, pulse the chopped almonds and dried cherries until they are finely chopped but not pureed. Spread the mixture on a plate. Roll the goat cheese into small balls (about 1 oz each) and then roll each ball in the almond and cherry mixture until well coated. Place on a baking sheet and bake for 10-12 minutes until slightly softened.

    Prepare the Salad Base

    While the goat cheese is baking, wash and dry the butter lettuce. Tear into bite-sized pieces and place in a large salad bowl. Add the sliced radish and pear.

    Make the Vinaigrette

    In a small bowl, whisk together 3 tablespoons of olive oil, 1 tablespoon of sherry vinegar, salt, and pepper to taste. Adjust seasoning as needed.

    Assemble the Salad

    Once the goat cheese is done, remove from the oven and let cool slightly. Drizzle the vinaigrette over the salad base and toss lightly. Top the salad with the warm goat cheese balls and sprinkle with house granola for added crunch.
