Prepare the Slaw
In a large bowl, combine the shredded cabbage and grated carrots. In a separate bowl, mix together mayonnaise, lemon juice, salt, and pepper to taste. Pour the dressing over the cabbage mixture and toss to combine. Set aside.

Make the Tartar Sauce
In a bowl, combine the smoked oysters, chopped pickles, capers, Dijon mustard, and fresh parsley. Mix well and refrigerate until ready to serve.

Fry the Chips
In a deep frying pan, heat oil over medium-high heat. Fry the potato strips in batches until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels, season with salt.

Prepare the Batter
In a bowl, whisk together flour, cornstarch, baking powder, salt, black pepper, and cold beer until smooth.

Fry the Oysters
Dip each oyster into the batter and carefully place them in the hot oil. Fry for 2-3 minutes or until golden brown. Remove and drain on paper towels.

Serve
Plate the fried oysters with chips and slaw. Drizzle vinegar over the chips and serve with smoked oyster tartar sauce on the side.
