Soup Preparation

    Cook the Onions

    In a large pot, heat the butter and olive oil over medium heat. Add the sliced onions and cook, stirring frequently, until they are caramelized and golden brown, about 25-30 minutes.

    Deglaze the Pot

    Add the dry white wine to the pot to deglaze it, scraping up any browned bits from the bottom. Let it simmer for about 5 minutes.

    Add Broth and Seasonings

    Pour in the beef broth, and add the thyme, bay leaf, salt, and black pepper. Bring the mixture to a simmer.

    Simmer the Soup

    Reduce the heat to low and let the soup simmer for at least 30 minutes to allow the flavors to meld.

    Prepare the Croutons

    While the soup is simmering, preheat the oven to 400°F (200°C). Cut a baguette into slices, place them on a baking sheet, and toast in the oven for about 10 minutes until golden.

    Ladle the soup into oven-safe bowls, top with toasted baguette slices, and generously sprinkle with grated Gruyère cheese. Broil for 2-3 minutes until the cheese is bubbly and golden.
