Prepare the Chicken
Preheat your oven to 375°F (190°C). Rinse the whole chicken under cold water and pat dry with paper towels.

Make the Rub
In a small bowl, combine olive oil, paprika, garlic powder, onion powder, cayenne pepper, dried thyme, salt, and black pepper. Mix well to form a paste.

Season the Chicken
Rub the spice mixture all over the chicken, ensuring to get under the skin and inside the cavity for maximum flavor.

Roast the Chicken
Place the chicken breast side up in a roasting pan. Roast in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C).

Prepare the Green Sauce
While the chicken is roasting, make the house green sauce by blending fresh parsley, cilantro, garlic cloves, lemon juice, and water until smooth. Add salt to taste.

Serve
Once the chicken is done, remove it from the oven and let it rest for 10 minutes. Carve the chicken and serve with the house green sauce.
