    Prepare the Sausage

    In a large skillet, heat the olive oil over medium heat. Add the sliced Andouille sausage and cook until browned, about 5-7 minutes. Remove from the skillet and set aside.

    Sauté Vegetables

    In the same skillet, add the diced onion, green bell pepper, and minced garlic. Sauté until the vegetables are softened, about 4-5 minutes.

    Combine Ingredients

    Add the canned diced tomatoes (with juice), vegetable broth, and Cajun seasoning to the skillet. Stir to combine.

    Simmer the Gravy

    Return the browned sausage to the skillet. Bring the mixture to a simmer and cook for about 15 minutes, stirring occasionally. Season with salt and black pepper to taste.

    Serve

    Once the gravy has thickened slightly, remove from heat and stir in the chopped parsley. Serve hot over rice or your favorite grain.
