Cooking Instructions
- 1
Prepare the Mojo
In a bowl, combine minced garlic, lime juice, olive oil, cumin, oregano, salt, black pepper, and red pepper flakes. Mix well to create a marinade.
- 2
Marinate the Pork
Place the pork shoulder in a large resealable plastic bag or dish. Pour the mojo marinade over the pork, ensuring it is well-coated. Seal the bag or cover the dish and refrigerate for at least 4 hours, preferably overnight.
- 3
Preheat the Oven
Preheat the oven to 300°F (150°C).
- 4
Roast the Pork
Remove the pork from the marinade and place it in a roasting pan. Reserve the marinade. Cover the pan with aluminum foil and roast in the preheated oven for 4-5 hours, or until the pork is tender and easily pulls apart.
- 5
Baste the Pork
During the last hour of cooking, baste the pork with the reserved marinade every 20-30 minutes for added flavor.
- 6
Rest and Serve
Once cooked, remove the pork from the oven and let it rest for 15-20 minutes before slicing. Garnish with fresh chopped cilantro and serve with lime wedges.
