Method

Prepare Burrito Filling

    Cook Ground Beef

    In a skillet over medium heat, brown the ground beef until it is fully cooked, about 7-10 minutes. Drain any excess fat.

    Add Taco Seasoning

    Stir in the taco seasoning and follow package instructions to add water if required. Simmer for 5 minutes.

    Prepare Tortillas

    Warm the flour tortillas in a dry skillet over low heat for about 30 seconds on each side or until pliable.

    Assemble Burritos

    Spread a layer of refried beans on each tortilla, followed by a portion of the ground beef mixture, a dollop of sour cream, and a handful of shredded cheese. Roll the tortillas tightly to form burritos.

Make Green Sauce

    Blend Ingredients

    In a blender, combine tomatillos, cilantro, garlic cloves, jalapeño, lime juice, and salt. Blend until smooth.

    Taste and Adjust

    Taste the sauce and adjust seasoning with more salt or lime juice as needed.

Prepare Rice and Beans

    Cook Rice

    In a saucepan, combine white rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes or until rice is tender.

    Sauté Onion

    In a separate skillet, heat olive oil over medium heat. Add chopped onion and sauté until translucent, about 5 minutes.

    Add Black Beans

    Add the canned black beans (drained and rinsed) to the onions, then stir in cumin. Heat through for about 5 minutes.

Assemble Wet Burrito Plate

    Preheat Oven

    Preheat your oven to 350°F (175°C).

    Place Burritos in Baking Dish

    Place the assembled burritos in a baking dish. Pour the green sauce evenly over the burritos and sprinkle with remaining shredded cheese.

    Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.

    Serve with Rice and Beans

    Serve the wet burritos hot, alongside the cooked rice and beans.
