Dough Preparation

Prepare the Dough
In a medium saucepan, combine water, 2 tablespoons of sugar, salt, and 1 tablespoon of butter. Bring to a boil over medium heat.

Once boiling, remove from heat and stir in the flour until the mixture forms a ball and pulls away from the sides of the pan.

Let the dough cool for about 10 minutes. Then, add the eggs one at a time, mixing well after each addition, until the dough is smooth and glossy.
Frying the Churros

Prepare for Frying
In a deep pot or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Create Churro Shapes
Fill a piping bag fitted with a star tip with the churro dough. Pipe 4-6 inch long strips of dough directly into the hot oil.

Fry the churros in batches, cooking for about 2-3 minutes or until they are golden brown. Use tongs to turn them occasionally for even cooking.

Once cooked, remove the churros from the oil and drain them on paper towels.

In a shallow bowl, mix together 1 cup of sugar and 2 teaspoons of ground cinnamon.
