Prepare the Taco Shells
In a deep skillet, heat the vegetable oil over medium heat. Once hot, fry the corn tortillas one at a time for about 30 seconds on each side until they are crispy. Drain on paper towels.

Cook the Ground Beef
In a skillet over medium heat, add the ground beef. Cook until browned, breaking it apart with a spatula. Drain excess fat. Stir in taco seasoning and water, and simmer for about 5 minutes until the mixture thickens.

Prepare the Toppings
While the beef is cooking, prepare your toppings by chopping the lettuce, tomatoes, and cilantro. Set aside the cheddar cheese, sour cream, and sliced jalapeños.
Assembly

Assemble the Tacos
Take a crispy taco shell and fill it with a generous amount of the ground beef mixture. Top with shredded lettuce, diced tomatoes, cheddar cheese, a dollop of sour cream, sliced jalapeños, and chopped cilantro. Repeat for the remaining taco shells.
