    Preheat the Pan

    Place a large skillet or frying pan over medium heat and allow it to preheat for 2-3 minutes.

    Prepare the Filling

    In a mixing bowl, combine the shredded chicken, sliced bell pepper, sliced onion, jalapeño (if using), and chopped cilantro. Drizzle with olive oil, and season with salt, black pepper, and cumin. Mix well until all ingredients are evenly coated.

    Layer the Quesadilla

    On a clean surface, lay one flour tortilla flat. Spread half of the cheddar and Monterey Jack cheese evenly over the tortilla. Spoon a portion of the filling mixture over the cheese, and then top with the remaining cheese. Finally, place the second tortilla on top.

    Cook the Quesadilla

    Carefully transfer the assembled quesadilla to the preheated skillet. Cook for about 3-4 minutes on one side until the tortilla is golden brown and the cheese begins to melt. Flip the quesadilla using a spatula, and cook for an additional 3-4 minutes on the other side.

    Slice and Serve

    Once both sides are cooked and the cheese is melted, remove the quesadilla from the skillet. Allow it to cool for a minute, then slice into wedges and serve warm with your favorite salsa or guacamole.
