Cooking the Pork

Prepare the Pork
Trim excess fat from the pork shoulder and cut it into large chunks.

Season the Pork
In a large bowl, combine minced garlic, chopped onion, cumin, chili powder, salt, and black pepper. Rub this mixture all over the pork chunks.

Slow Cook
Place the seasoned pork into a slow cooker. Add chicken broth and lime juice. Cover and cook on low for 8 hours or until the pork is tender and easily pulled apart.

Shred the Pork
Once cooked, shred the pork using two forks and mix it with the juices in the slow cooker.
Making Pineapple Salsa

Combine Ingredients
In a medium bowl, mix together diced pineapple, red onion, cilantro, minced jalapeño, lime juice, and salt.

Let it Rest
Cover the salsa and let it sit for at least 15 minutes to allow the flavors to meld.
Assembling Tacos

Warm the Tortillas
In a skillet over medium heat, warm the corn tortillas for about 30 seconds on each side until pliable.

Build the Tacos
Place a generous amount of shredded pork on each tortilla. Top with pineapple salsa and slices of avocado.

Serve the tacos with lime wedges on the side for squeezing over the top.
