In a large bowl, combine the cooked rice, black beans, corn, diced tomatoes, shredded cheese, chopped cilantro, sour cream, salt, and black pepper. Mix well until all ingredients are evenly combined.

Lay a tortilla flat on a clean surface. Spoon a generous amount of the filling mixture onto the center of the tortilla. Fold in the sides and roll the tortilla tightly to form a burrito. Repeat this process for the remaining tortillas.

In a blender or food processor, combine the fresh cilantro, chopped jalapeño, lime juice, olive oil, minced garlic, and salt. Blend until smooth. Taste and adjust seasoning if needed.
