Cooking Rice

Prepare the Rice
In a medium saucepan, bring 2 cups of water to a boil. Add 1 cup of white rice and a pinch of salt. Reduce heat to low, cover, and simmer for 18-20 minutes until rice is tender and water is absorbed.

Heat the Black Beans
In a small saucepan, heat 1 cup of black beans over medium heat. Stir occasionally until warmed through, about 5-7 minutes. Season with salt and pepper to taste.

Cook the Meat
In a skillet, heat 1 tablespoon of olive oil over medium heat. Add 1 pound of ground beef (or chicken/turkey) and cook until browned, about 5-7 minutes. Drain excess fat, then stir in 2 tablespoons of taco seasoning. Add a splash of water if needed, and cook for an additional 2 minutes until well combined.

In a large bowl, layer the cooked rice at the bottom, followed by the heated black beans, and the seasoned meat. Top with diced tomatoes, shredded lettuce, sour cream, shredded cheese, sliced jalapeños, guacamole, and chopped cilantro. Serve with lime wedges on the side for squeezing over the top.
