Begin by gathering all ingredients. Shred the cooked chicken breast and chop the red bell pepper and green onions. Set aside.

In a small bowl, combine cumin, chili powder, garlic powder, salt, and black pepper. Mix well.

Heat a large skillet over medium heat. Place one flour tortilla in the skillet. Sprinkle half of the cheddar and Monterey Jack cheese on one half of the tortilla. Add the shredded chicken, chopped red bell pepper, and green onions on top of the cheese. Sprinkle the spice mixture over the fillings and top with the remaining cheese.

Fold the other half of the tortilla over the fillings. Cook for 3-4 minutes until the bottom is golden brown and the cheese starts to melt. Carefully flip the quesadilla and cook the other side for an additional 3-4 minutes until golden brown and fully melted.
