Cooking Instructions

  1. 1

    Prepare the Beans

If using dried black beans, soak them overnight and rinse before cooking.

  2. 2

    Sauté the Aromatics

In a large pot, heat olive oil over medium heat. Add diced onion and sauté until translucent, about 5 minutes. Add minced garlic and sauté for an additional 1-2 minutes until fragrant.

  3. 3

    Combine Ingredients

Add the soaked black beans (or canned, drained beans), vegetable broth, cumin powder, and paprika to the pot. Stir well to combine.

  4. 4

    Simmer

Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for about 1.5 to 2 hours if using dried beans, or 20-30 minutes if using canned beans, until the beans are tender and flavors are well combined.

  5. 5

    Season to Taste

Add salt and black pepper to taste. Stir in chopped fresh cilantro before serving.

  6. 6

    Serve

Enjoy your vegan black beans warm as a side dish or as a main course over rice or in tacos.
