Cooking Instructions

  1. 1

    Prep the Ingredients

Rinse the red beans under cold water and soak them overnight. Chop the onion, garlic, green bell pepper, and celery.

  2. 2

    Cook the Sausage

In a large pot, heat the olive oil over medium heat. Add the smoked sausage and cook until browned, about 5-7 minutes. Remove and set aside.

  3. 3

    Sauté the Vegetables

In the same pot, add the chopped onion, garlic, green bell pepper, and celery. Sauté until the vegetables are tender, about 5 minutes.

  4. 4

    Combine Ingredients

Add the soaked red beans, chicken broth, bay leaves, cayenne pepper, thyme, salt, and black pepper to the pot. Stir well to combine.

  5. 5

    Simmer

Bring the mixture to a boil, then reduce the heat to low and let it simmer, covered, for about 1.5 to 2 hours, or until the beans are tender.

  6. 6

    Finish the Dish

Remove the bay leaves and stir in the cooked sausage. Cook for an additional 10 minutes to heat through.

  7. 7

    Serve

Serve the red beans with smoked sausage over a bed of cooked rice.
