Chicken Creole Recipe
This rich tomato based sauce is loaded with all natural chicken, green peppers, onions and spices. It’s then thickened with a white wine reduced roux and finished with extra virgin olive oil. The word is superb!

Prepare the Ingredients
Start by cutting the chicken breasts into bite-sized pieces. Chop the onion and green bell pepper, and mince the garlic.

Cook the Chicken
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chicken pieces and season with salt and black pepper. Cook until the chicken is browned and cooked through, about 5-7 minutes. Remove from skillet and set aside.

Sauté the Vegetables
In the same skillet, add the remaining tablespoon of olive oil. Add the chopped onion and green bell pepper. Sauté for about 5 minutes until softened. Add the minced garlic and cook for an additional 1-2 minutes.

Make the Roux
Sprinkle the flour over the sautéed vegetables and stir continuously for about 2 minutes until the flour is lightly browned.

Add the Tomatoes and Broth
Stir in the canned diced tomatoes, chicken broth, and white wine. Bring the mixture to a simmer.

Season the Sauce
Add paprika, cayenne pepper, and additional salt and black pepper to taste. Allow the sauce to simmer for about 10 minutes, stirring occasionally, until it thickens slightly.

Combine Chicken and Sauce
Return the cooked chicken to the skillet and mix well to coat with the sauce. Simmer for another 5 minutes.
